The service relies on a team combining mixology, service and culinary animation. The objective is not to stack animations one after another, but to compose one coherent experience: A visible bar, a short menu, bites designed to respond to the cocktails and a rhythm adapted to a boutique evening.
Guests have access to a menu of five cocktails and mocktails, based on three cocktails per person. Ingredients, spirits, fresh fruit, juices, syrups, liqueurs, flavour pearls, ice, glassware and professional equipment are included in the service. The event cocktail bar becomes a central point, without ever becoming cumbersome.
The first pairing combines the Bellini Intense with a salmon gravlax blini, tangy cream and mango pearls. Champagne brings tension, white peach softens the whole, while lime and mango create a fresh, clean and luminous reading.
The Cancha, built around Havana Club Especial rum, lime, French honey and sparkling water, accompanies a duck breast skewer with honey and citrus. The cocktail answers the richness of the duck without overpowering it: Honey creates the link, lime brings relief and freshness extends the tasting.
With the Old Sweet, the pairing becomes deeper. Ballantine's Sweet Blend, homemade orange zest liqueur and cacao bitters naturally extend the indulgence of a beef Rossini skewer, in a more intense register of vanilla, caramel and cacao notes.
The menu is not limited to the three pairings. It also includes a signature cocktail, the Mule de Provence, imagined around vodka, lime, Ginger Beer, Angostura bitters and a fresh rosemary sprig harvested by our team.
This detail gives the format a more personal touch. Rosemary, the liveliness of lime and the tension of Ginger Beer install a discreet Mediterranean signature, coherent with an evening in Cannes, without becoming decorative. The cocktail remains readable, fresh and immediately understandable.
The culinary part completes the bar with a varied cocktail reception: Mini crispy cone with truffle labneh, sea bass tartare with lemon cream, poultry medallion with paprika mayonnaise, salmon gravlax blini, tuna maki and filled pita bread.
The culinary animation gives the evening a second rhythm with minute-service pieces: Duck breast skewer with honey and citrus, beef Rossini skewer, truffle mashed potatoes, crispy risotto, porcini mushroom emulsion and homemade pesto. On the sweet side, craquelin choux, citrus tartlets, tiramisu and chocolate hazelnut brownies extend the experience without breaking the flow.
